I’m a sucker for some great cochinita pibil (achiote and orange juice marinated pork slow cooked in a banana leaf?!). What’s not to love? And then you make it a costra and crust that cheese all up in there. Mercy. (Upper right) @ponchos.restaurantes’ got it going on in #SMA’s @MercadodelCarmen_SMA.

@smokedtaco_ fans please help me! I’m pretty sure this is the Fleeing Californian (that fried avocado!), the Money Muscle (teriyaki pulled pork with Fresno peppers was 💵 fo sho), Smoking Pastor (pulled pork with creamy chimichurri was on point) and I *think* the special Banh Mi with its carrots and cilantro. Am I remembering correctly? All I know is this is GOOD. Smokey meat goodness with deliciously paired veggies! Yes Utah County! Yes!! I’m fully on board with taco innovation in some fusion tacos — would be even better with some handmade tortillas!
Recently a friend described it as “kinda like hummus and mud.” 😂 Still makes me laugh. I instantly thought of this insanely delicious Oaxacan mole negro I had coming back from our #exectacotour last March. 🖤 I’m pretty sure there are concourses of angels in the cocina bringing the divine recipes of Sta. Celia and St. Alam to life. 👼🏼 Perfectly balanced chocolatey sweetness with savory spices and smoky burnt blackness that gives it the characteristic Oaxacan depth. (Had them swap out the mole rojo for mole negro because duh and #offmenu). And then they crisped the chicken skin on the breast?! What?! Incredible and ideal for sopping up the heaven’s muddy Mexican sauce. Where there’s smoke there fire and seriously everything at @pasillodehumo was 🔥🔥🔥. The sopa Oaxaqueña and the dose of #vitaminT with tasajo tacos … best entradas! Cannot wait to go back and take everyone!
The making of ... @bhurd2u's play by play on the building of the al pastor trompo is 💵. Throwback to the Grand Opening of @maizetacosut in Draper — answering the call for taco therapy in the south end of Salt Lake valley! Huge props for making their corn tortillas by hand. Fundamentals!  Carne asada, carnitas, and that elote!! SLC foodie royalty were loving it all...  So stoked to go back tomorrow (Friday) night for the final push for fundraising for @childshopefoundation — an amazing and transparent non-profit that lifts orphans from surviving to thriving in Mexico! I've been there and see the work they do and interacted with the kids. East meets West indeed! And everyone’s thrilled! Arigato @yokotacoslc_ for such crazy good fusion tacos. Check this out…crispy chicken which seemed to have this Japanese curry hint. Carnitas so soft and crispy at the same time. Savory paradise. Quality tortillas. Crispy cauliflower tostada (a hearty meal in and of itself) whaaaa?! I knew this team really cared when they were gushing about the heirloom beans from Rancho Gordo. Insane. And then… I wondered about this special seasoning on their in-house fried chips and the chef brings out this little cup for me to take home of their secret seasoning which is… wait for it… @tajinusa with dehydrated lime juice granules they add from drying their own LIMES. 🤯🤯🤯 please everyone stop what you’re doing and get there! (And remember to ask for their citrusy habanero salsa!) #vitaminT #chasingtacos
I have to admit, when we stopped into the food court at the mall (malls are everything in the UAE) and spotted tacos (searching, always searching), I was skeptical. Let’s just say these chicken pastor (no pork, of course) scratched the itch. Stretchy tortillas 🤔, medium heat on the salsa…they were tacos in Abu Dhabi and they did have lime so 👏🏽! And essentially in the shadow of this Grand Mosque. And wow. What a stunning, reverent and holy place! It was like @liladowns knew us. This was a first night anthem to kickoff our taco tour mastermind weekend. (And anthem for life).  "Yo tengo... Yo tengoooooooo ganas de comer tacos!"  ["I want... I waaaaaant to eat tacos!"]  She's a Grammy-winner and Mexican legend. She blew our minds and brought down the house at Palacio de Bellas Artes @palaciooficial. She exudes a passion and celebration of culture, life, love, food and heritage. Unabashedly herself! Spectacular show with folklore dancers, duet with @natalialafourcade and full orchestra...we couldn't get enough.  Inspired by Lila’s call to arms, we obviously went for late night tacos. It's what you do.  @taqueriaorinoco was exactly what we needed. This absolute powerhouse group right here! So insanely grateful for each of them. Juggling so many things (businesses they founded and are operating, families, volunteer and church leadership, personal development), they intentionally carved out 4 days out to focus on 2 things: brand/personal transformation and #chasingtacos. 🌮🏃🏾‍♂️ Makes perfect sense to me. Both things I'm completely obsessed with. And precisely the reason I created these executive taco tour mastermind weekends. We like to call Vitamin T — tacos and brand transformation. @forevervitamint @jgamett perfectly described what happened to each of us a few weeks ago in Mexico City: "Initially I thought I was going to enjoy tacos & culture with fellow CEOs, but I received a whole lot more. I returned a with a clear vision for my company, conviction to make the needed changes and energy to see them through. It was perfect timing and I had no idea how bad I needed it!" Happy Taco 2sday! Double trompos is double your pleasure. One classic pastor de puerco and the other pastor de sirloin. But actually the surprise standout taco here was camarones. 🍤🌮🏃🏽‍♂️ fresh tortillas. Tasty aioli sauce on the grilled shrimp. Excelente! Hat tip to @jambalaya_jeenyus for the first time visit here.
